How can you tell the difference between the top and bottom half of a double boiler?

and how deep should the water be in the bottom?

The top 1/2 fits inside the bottom 1/2 , you can also make a makeshift one with a sauce pan and a metal mixing bowl.

The water level should be aprox. 1/2 the depth of the bottom pan, I would also keep a tea pot or other pan of water on another burner to add more if necessary.

My recollection is that the water in the bottom should not be boiling but simmering.
